To achieve a truly authentic Wiener schnitzel, start with tender veal. Carefully tenderise the meat, season it with salt on both sides, then coat it with flour, followed by beaten egg, and finally, breadcrumbs. In a large frying pan, melt an ample amount of clarified butter – the schnitzel should be able to swim in it. To test the temperature, sprinkle a few breadcrumbs or add a small piece of butter. If it sizzles, the butter is ready. Gently place the schnitzel in the pan and fry it for approximately two to four minutes on each side until it turns golden brown. Serve the schnitzel with lemon slices and cranberries, accompanied by parsley potatoes, homemade chips, or a fresh salad. Indulge in the exquisite flavours!
